Teriyaki Chicken Casserole
Instructions
  1. First, cook the rice according to the directions on the package. Stir it occasionally so the rice don't get burnt on the bottom. It should be ready in 10 minutes. 
  2. Dice the chicken thighs. In a large skillet, cook the meat until it is cooked.
  3. Cut the broccoli and the baby carrots (the long way). When the chicken is cooked, add in the veggies.
  4. Add 1/4 cup of the stir fry sauce and stir. Stir in salt and black pepper as well. Put the lid on the pot to simmer. This will help soften the veggies faster. 
  5. When the veggies are soften, add in the rice. Stir well.
  6. Put it in a pan and serve. Enjoy!

I’ve received the Uncle Ben’s Flavor Infusions voxbox from Influenster and decided to make Teriyaki chicken casserole with the chicken & herb flavored rice. I got this product free for testing and reviewing purposes. All opinions are my own.

This chicken & herb flavored rice smells good just like chicken and herbs. The smell reminds me of the chicken flavored ramen noodles. It’s also very easy to make. On the back of the packaging there is a direction on how to cook the rice. The rice taste good. My husband agrees too. It’s really flavorful. It goes really well with my teriyaki chicken casserole. Perfect for family dinner, gatherings, and pot luck.

Ingredients:
  • 1 Pack Uncle Ben’s Flavor Infusion Chicken & Herb Rice (Or 2 cups of any rice)
  • 4 Chicken thighs or 2 breasts, diced
  • 2 Crown Broccoli
  • 2 Cups Baby Carrots, cut
  • 1/4 Cup Stirfry sauce (Recipe Here)
  • Salt, to taste
  • Black pepper, to taste

Teriyaki Tilapia

  1. Preheat the oven to 350 Degrees.  Since these tilapia fish are store bought they are already cleaned. If it is fresh, remove the scales and take out the fish guts. Rinse and pat them dry. Sprinkle about 1 tsp of salt and black peppers to each side of the fish. Bake for 15 minutes.
  2. In a small bowl, mixed the mixed sauce, lime juice, and Thai chili peppers. After 15 minutes, spread the sauce to both sides of the tilapia. Add cilantro on top. Bake for 5 more minutes.
  3. These tilapia fishes have many bones so debone carefully before eating. Enjoy!

I was buying groceries and found these tilapia fishes. They look good. I decided to buy them since I haven’t had fish for awhile. These teriyaki tilapia are so delicious. It reminded me of how my mom used to make it for my siblings and I when we still live together. I tweeked it to my taste.

Ingredients:
  • 4 Tilapia fish
  • 3/4 – 1 cup of my Mixed Sauce (Recipe HERE)
  • 1 Lime, squeezed
  • 2-4 Thai Chili Peppers, minced
  • 1/4 cup Cilantro, cut
  • Salt, to taste
  • Black Pepper, to taste
Directions:

Cheesy Taco Pasta

  1. In a medium pot, boil some water and cook the rotini pasta.
  2. While the rotini pasta is cooking, cook the ground beef in another pot or skillet. When it is cooked throughly, drained the grease.
  3. When the rotini pasta is tender, drain the liquid. Combine the pasta and ground beef together. Stir in the taco seasoning mix, salt, black pepper, cheese, and salsa.
  4. Serve with optional toppings, if desired. Enjoy!

I love tacos and pastas so I decided to combine them together. This cheesy taco pasta is simple and easy to make. Super delicious!

Ingredients:
  • 1 lb Ground Beef
  • ½ tsp salt
  • Black pepper, to taste
  • 1 Packet Taco seasoning
  • 1 cup jar mild salsa
  • 8 oz Rotini pasta
  • 1 ½ cups shredded Mexican-style cheese
  • Optional toppings: tomatoes, sour cream, avocado, tortilla chips, cilantro, hot sauce

Slow Cooker Carnitas

  1. Diced the onion. Peel the garlic cloves and minced.
  2. In a small bowl, mixed the seasonings together. Cut the meat into fourths and sprinkle the seasonings on the meat. Put the meat at the bottom of the slow cooker.
  3. Put the diced onion, minced garlic cloves, and cinnamon sticks in the slow cooker. Cut the oranges in half and squeeze the juice over the meat.
  4. Cook it on slow for 5-6 hours or until the meat is tender and falls apart. Enjoy!

Slow cooker carnitas are delicious! The recipe calls for orange juice and cinnamon sticks. I thought it was a weird combination, but don’t be scare. It’s not sweet, but taste amazing and very flavorful.

By slow cooking the meat, it makes the meat more juicy and tender. Not to mention that it makes my house smells good as well. If there are extra or leftovers, you can store it in the freezer for another meal.

Ingredients:
  • 3 lb Pork Butt Roast or Pork Shoulder
  • 1 Yellow Onion
  • 2 Oranges
  • 4 Garlic Cloves, minced
  • 2 Cinnamon Sticks
  • 1/2 tbsp Oregano
  • 1/2 tbsp Cumin
  • 1/2 tsp Chipotle Pepper Powder
  • Salt, to taste

  1. Rinse the brussel sprouts then cut them in half or fourth. Set aside.
  2. Rinse the shrimp, take off the tail, and drain. In a medium bowl, put a paper towel in. Pour the shrimp into the bowl. This will help soak the liquid from the shrimp. Set aside.
  3. Cut the bacon into bite size. In a pan, cook the bacon until it's cook. Place a paper towel on a plate and scoop up the bacon bites onto it.
  4. In a large pan, heat 1 tsp olive oil. Pour in the brussel sprouts and cook until tender.
  5. Stir in the shrimp and bacon. Add the lemon pepper seasoning, salt, and black pepper.
  6. Serve with rice. Enjoy!

Ingredients:
  • 1 lb of Brussel sprouts
  • 1 pack Bacon
  • 1 lb Shrimp
  • 2 tsp Lemon pepper with garlic & onion
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp Olive oil



Directions:

Rinse the brussel sprouts then cut them in half or fourth. Set aside.

Rinse the shrimp, take off the tail, and drain. In a medium bowl, put a paper towel in. Pour the shrimp into the bowl. This will help soak the liquid from the shrimp. I’m using cooked shrimp, but raw shrimp works too. Set aside.

Cut the bacon into bite size. In a pan, cook the bacon until it’s cook. Place a paper towel on a plate and scoop up the bacon bites onto it.

In a large pan, heat 1 tsp olive oil. Pour in the brussel sprouts and cook until tender.

Stir in the shrimp and bacon. Add the lemon pepper seasoning, salt, and black pepper.
