Chocolate Covered Brownies

Chocolate covered brownies are perfect treats for birthdays, special occasions, and Valentine’s Day. It’s great when you’re craving for something sweet too. 

These are very easy to make. You’ll need a silicone mold, melted chocolates, and brownies. I like this brownie recipe because it’s soft, chewy, and gooey. 

You’ll need:

Brownies Recipe:

  • 1 cup granulated sugar 
  • ½ cup melted unsalted butter, still warm/hot
  • 2 large eggs
  • 2 tablespoons water
  • ⅔ cup unsweetened cocoa powder 
  • ⅔ cup powdered sugar
  • ¾ cup all-purpose flour
  • 1 cup chocolate chips
  • ½ tsp teaspoon kosher salt

Preheat oven to 350°F. Line a pan with foil or parchment paper, leaving a couple of inches of overhang on two sides. This will allow you to easily lift the brownies out of the pan later.

Combine granulated sugar and hot butter in a large bowl. Stir it briefly then let it sit for about 5 minutes. Whisk the butter and sugar vigorously for 30 seconds then add eggs, water, and vanilla extract, whisking again until combined. 

Sprinkle cocoa powder, powdered sugar, flour, chocolate chips, and salt over the wet ingredients. Use a silicone spatula to stir the mixture until it is well combined.

Pour the batter into a 9×9 pan and smooth the top. Bake for 25-30 minutes (begin checking at 25 minutes). The brownies are done when a toothpick inserted into the center comes out without raw batter on it. Be careful not to overbake. Remove from the oven and let it cool. When the brownies are cool, cut them into 16 pieces. 

Putting It Together

Melt the chocolates. Add the melted chocolates into the mold then put it in the fridge until firm. 

When the chocolates are firm, take them out. Remove the hard edges of the brownies and add it to the chocolate mold. Cover the top with chocolate and put it in the fridge until firm. 

Once firm, pop out the chocolate covered brownies. Remove any excess chocolates on the sides. Drizzle chocolate and add sprinkles. Enjoy!

Hot Cocoa Bombs Recipe

Hot cocoa bomb

Hot chocolate bombs are perfect to enjoy during the winter season. It’s great as gifts and as special treats. It’s very easy to make and you can make it at home. I’m using the large molds to make mine.

You can find the cocoa bomb mold here:

Large mold: 2 – 6 molds (2.5″ diameter)

Medium mold: 2 – 6 molds size (2″ diameter)

Instructions:

  • Cut the chocolate bark in half and put it in a microwavable bowl.
  • Microwave for about 2 minutes then stir until the chocolate melts
  • Spread the chocolate in the mold. Put it in the fridge for about 2-3 minutes.
  • Take the mold out and add another layer of chocolate, especially on the top edges.
  • Put it in the fridge again until hardens.
  • Once the chocolate is hard, gently take it out of the mold.
  • Heat a nonstick pan on low.
  • Take one side of the chocolate dome and put it in the pan for 2 seconds to melt the edges.
  • Remove and add the hot cocoa powder and mini marshmallows.
  • Take the other side of the chocolate dome and melt the edges.
  • Then put it on top of the other one to close and seal the cocoa bomb.
  • Drizzle melted chocolate on top and add sprinkles of choice
  • Repeat until all is done

You can store them using cupcake liners in a cupcake box or cellophane bags.

Hot Cocoa Bombs

Equipment

  • Chocolate Bomb Mold

Ingredients

  • 1 Chocolate Almond Bark 24 oz
  • Hot Cocoa Powder
  • Mini Marshmallows
  • Sprinkles

Instructions

  • Cut the chocolate bark in half and put it in a microwavable bowl.
  • Microwave for about 2 minutes then stir until the chocolate melts
  • Spread the chocolate in the mold. Put it in the fridge for about 2-3 minutes.
  • Take the mold out and add another layer of chocolate, especially on the top edges.
  • Put it in the fridge again until hardens.
  • Once the chocolate is hard, gently take it out of the mold.
  • Heat a nonstick pan on low.
  • Take one side of the chocolate dome and put it in the pan for 2 seconds to melt the edges.
  • Remove and add the hot cocoa powder and mini marshmallows.
  • Take the other side of the chocolate dome and melt the edges.
  • Then put it on top of the other one to close and seal the cocoa bomb.
  • Drizzle melted chocolate on top and add sprinkles of choice
  • Repeat until all is done

Whipped Hot Chocolate Milk

Whipped hot chocolate milk is the perfect drink to enjoy during the fall/winter season. It’s so easy to make and kids approved.

You can use any type of milk. Hot or cold milk? That’s your choice. It tastes good either way. If you want to make it fancy, there are many toppings to add on top. 

Ingredients:

  • 5 tbsp heavy whipping cream
  • 2 tbsp hot cocoa mix
  • 1 cup milk (your choice)
  • 1 tbsp powdered sugar (optional)

Toppings:

  • Shredded chocolate
  • Mini marshmallows
  • Sprinkles
  • Chocolate drizzle
  • Pumpkin spice
  • Candies

Instructions:

In a bowl pour in the heavy whipping cream, powdered sugar, and cocoa mix.

Using a stand mixer or hand held mixer, whipped until it is fluffy and thick. 

Warm up the milk in the microwave for 1-2 minutes. 

Pipe or spoon some whipped chocolate on top of the milk. 

Add desired toppings and enjoy!

Chocolate Covered Oreos Using a Mold

Chocolate covered Oreos are perfect for baby showers, birthday parties, gatherings, and other events. It’s also a great treat gift. 

I got this cookie mold on Amazon. The diameter of each cookie mold is about 2 inches. It’s the perfect size for Oreos. You can get it here. If you prefer silicone molds, get it here.

I’ll show you how to get the perfect chocolate covered Oreos. I like to do it this way so that the Oreos will stay in place. I tried the other way where you don’t refrigerate and just fill the melted chocolate to the top of the mold. Sometimes the Oreos don’t stay in place.

Let’s get started!

Ingredients:

  • 6 Oreos
  • 1 pack of white chocolate chips
  • Cookie Mold
  • Piping bags
  • Food color
  • Sprinkles

Instructions:

In a small pot or bowl, melt the chocolate chips. Stir it frequently and be careful not to burn it. Add food coloring if you want. I’m going to leave it white for now.

Let the melted chocolate cool for 30 seconds to a minute then pour it into a piping bag and cut off the tip.

Fill the bottom of the mold with a thin layer of melted chocolate. Tap the mold gently against the work surface to spread the melted chocolate. Put the oreos on top of the melted chocolate. Refrigerate for 1-2 minutes. 

Take the mold out. Fill the rest of the mold until it’s covered. Refrigerate for about 15 minutes or until hardened. 

When the chocolate is hardened, pop out the oreos. 

Now it’s time to decorate and be creative. 

I made this chocolate covered Oreos for a baby shower so I bought these treat bags on Amazon. It is 4 in x 6 in. It fits perfectly. You can get it here.

Everyone is making these Dalgona coffee drinks. Since I don’t drink coffee I decided to try these alternatives: Chocolate and Strawberry whipped milk! These are a fun treat for the kids. My kids love them.

Ingredients:

  • 1 cup heavy whipped cream
  • ½ cup Chocolate or Strawberry Nesquik powder
  • 3 tbsp powdered sugar
  • ½ cup milk 

Optional

  • Ice
  • Sprinkles 
  • Shaved chocolate
  • Strawberries

Instructions:

Add heavy whipped cream, Nesquik powder, and powdered sugar in a bowl or stand mixer. Whipped the cream until thick and fluffy. 

Pour milk into a cup and add the Nesquik whipped cream. Top it with shaved chocolate, strawberries, or sprinkles.
