Fresh Spring Rolls

Fresh spring rolls are light and healthy. It is made with vegetables, shrimp, pork meat, and vermicelli noodles wrapped in rice paper. 

Growing up I would help my mom make them. I wasn’t very good at rolling at that time so they were all different shapes and sizes. Now that I’m older, my rolling got better. 

Fresh Spring Rolls

Spring rolls are easy to make. First, prepare the ingredients then roll. You can put in vegetables or throw some meat in there if you like. I like to add red roast pork and Vietnamese ham. I’ve added bacon in Spring rolls before too and it tastes good. 

I like to dip my spring rolls in a spicy peanut sauce. It just adds that extra spice and flavor to it.

Ingredients:

  • 1 pack of rice paper
  • 6 oz Vermicelli noodles
  • 1 Cucumber, thinly sliced
  • 1 Shredded carrot
  • 2 Romaine lettuce
  • 12 oz Shrimp, cooked and sliced in half

Optional:

  • Vietnamese ham
  • Bacon
  • Pork belly
  • Cilantro
  • Avocado

Instructions:

Fresh Spring Rolls

Cook your red roast pork then thinly slice them. Set it aside.

In a medium pot cook your vermicelli noodles until soft. Drain and set aside. 

Prepare the vegetables and workspace. You will need a bowl of cold water to dip the rice paper in.

Fresh Spring Rolls

Dip the rice paper in cold water for 2 seconds then put it on a flat surface. Don’t worry if it’s still hard. It will soften.

Place the lettuce, noodles, vegetables, pork, and shrimp inside. 

It’s better to wait until the wrapper is soft before rolling. 

Roll once, fold the sides, then continue rolling. Repeat until ingredients are done.

Fresh Spring Rolls

Spring rolls tend to stick to each other so it’s not a good idea to stack them together once you’re done rolling. Some people like to wrap them in plastic wrap individually. Here I put plastic wrap on a tray and space them out. Once full, I put another plastic wrap on top and lay them out again.

Spring rolls taste better fresh. If you do have some extra, wrap it individually and put it in the fridge for the next day. Microwave it for 30 seconds and it should be good to eat. I’ve noticed that if I don’t wrap it, the wrappers and noodles will get hard.

Whipped Hot Chocolate Milk

Whipped hot chocolate milk is the perfect drink to enjoy during the fall/winter season. It’s so easy to make and kids approved.

You can use any type of milk. Hot or cold milk? That’s your choice. It tastes good either way. If you want to make it fancy, there are many toppings to add on top. 

Ingredients:

  • 5 tbsp heavy whipping cream
  • 2 tbsp hot cocoa mix
  • 1 cup milk (your choice)
  • 1 tbsp powdered sugar (optional)

Toppings:

  • Shredded chocolate
  • Mini marshmallows
  • Sprinkles
  • Chocolate drizzle
  • Pumpkin spice
  • Candies

Instructions:

In a bowl pour in the heavy whipping cream, powdered sugar, and cocoa mix.

Using a stand mixer or hand held mixer, whipped until it is fluffy and thick. 

Warm up the milk in the microwave for 1-2 minutes. 

Pipe or spoon some whipped chocolate on top of the milk. 

Add desired toppings and enjoy!

3 Ingredients Nutella Brownies

Make brownies with just 3 ingredients! It has a chewy and fudgy texture. So easy to make and taste delicious. This recipe uses Nutella, eggs, and flour. If you love Nutella then you’ll have to try this recipe. 

Ingredients:

  • 1 ¼ cup Nutella 
  • 2 large eggs
  • ½ cup all purpose flour

Instructions:

Preheat the oven to 350 degrees F. Grease and line a 8×8 or 9×9 pan with parchment paper.

Heat the Nutella in a microwavable bowl for 30 seconds then stir. Heat it again for another 30 seconds and stir. 

In a medium bowl, beat two eggs. Stir in the Nutella and flour until smooth.

Pour the batter into the pan. Bake for 25 minutes. Be careful to not bake too long or it will dry out.

Take it out of the oven. Let it cool before cutting and serving. Enjoy!

Chocolate Covered Oreos Using a Mold

Chocolate covered Oreos are perfect for baby showers, birthday parties, gatherings, and other events. It’s also a great treat gift. 

I got this cookie mold on Amazon. The diameter of each cookie mold is about 2 inches. It’s the perfect size for Oreos. You can get it here. If you prefer silicone molds, get it here.

I’ll show you how to get the perfect chocolate covered Oreos. I like to do it this way so that the Oreos will stay in place. I tried the other way where you don’t refrigerate and just fill the melted chocolate to the top of the mold. Sometimes the Oreos don’t stay in place.

Let’s get started!

Ingredients:

  • 6 Oreos
  • 1 pack of white chocolate chips
  • Cookie Mold
  • Piping bags
  • Food color
  • Sprinkles

Instructions:

In a small pot or bowl, melt the chocolate chips. Stir it frequently and be careful not to burn it. Add food coloring if you want. I’m going to leave it white for now.

Let the melted chocolate cool for 30 seconds to a minute then pour it into a piping bag and cut off the tip.

Fill the bottom of the mold with a thin layer of melted chocolate. Tap the mold gently against the work surface to spread the melted chocolate. Put the oreos on top of the melted chocolate. Refrigerate for 1-2 minutes. 

Take the mold out. Fill the rest of the mold until it’s covered. Refrigerate for about 15 minutes or until hardened. 

When the chocolate is hardened, pop out the oreos. 

Now it’s time to decorate and be creative.

Mongolian Beef

Mongolian beef is thin slices of beef that are simmered in soy sauce, brown sugar, garlic, and ginger. Cornstarch helps make the sauce thickens to coat the beef. It has a sweet, spicy, and savory flavor. 

I live in a town that is limited to good Chinese food. This is so easy to make. Homemade is better than takeout. My husband approves!

Ingredients: 

  • 2 tbsp vegetable oil 
  • 1 lb beef steak or chuck roast (trim off fat)
  • 1 cup broccoli
  • 1/2 cup mushrooms, cut into small pieces
  • 1 red bell peppers, cut into strips
  • 3 stalks green onion, cut into 3-4 pieces
  • 1 small onion, diced
  • 1 tsp salt 
  • 1 tsp black pepper

Mongolian Beef Sauce Ingredients

  • 1 tbsp ginger, minced or 2 tsp ginger powder 
  • 4-5 garlic cloves, minced or 2 tsp garlic powder
  • 1/2 cup low sodium soy sauce
  • 1/2 cup water
  • 1/2 cup brown sugar
  • 1/2 cup cornstarch
  • 2-4 Birds eye chili peppers, sliced (optional)

Instructions:

Cut the broccoli, mushrooms, bell pepper, green onions, and onions. Set aside.

Mongolian Beef

Cut the beef into thin slices and set.

Minced the garlic and ginger. Sliced the peppers.

In a small bowl, add soy sauce, water, brown sugar, and cornstarch. Mix well then add in garlic, ginger, and chili peppers. 

In a frying pan, heat up the oil on medium heat. When the oil is hot, cook the beef. Add salt and black pepper.

Add the vegetables when the beef is cooked and stir for 2 minutes. 

Pour the sauce over. Stir until the sauce thickens then turn off the stove.

Served with rice. Enjoy!
