This is the best royal icing recipe. It is very easy to use to decorate sugar cookies. It dries up quickly too. I got this recipe from Follow the Ruels. She gives some good tips on thinning the icing so check out her post.

Ingredients: 
  • 2 tbsp Meringue Powder
  • 1/4 cup Water and 1-2 tbsp of water for thinning
  • 4 cups Powder Sugar
  • 1 tsp Vanilla Extract
Directions:

  1. Preheat the oven to 350 Degrees and line a baking sheet with parchment paper.
  2. In a medium bowl, stir flour and baking powder together. In a large bowl, cream the butter and sugar. Stir in eggs, vanilla extract, and almond extract. Add the flour and baking powder in and kneed the dough. 
  3. The dough doesn't really stick well together and it breaks apart easily. DO NOT CHILL THE DOUGH!
  4. Roll the dough out into 1/4 inch thick. Using cookie cutters, cut them into shapes. Place the cookies on the baking sheet and freeze them for 5-7 minutes. Then bake for 10-12 minutes. Let it cool off before decorating.

My daughter loves to help me bake. I enjoy baking with her. It’s mother daughter bonding time. She helped me picked the cookie cutter shapes. After I rolled out the dough, she helped me cut it. Making sugar cookies is similar to play-doh so she likes it and had fun helping.

  1. Place the egg whites and sugar in the metal bowl of the stand mixer. Put the bowl on top of a pot with boiling water, not touching the water. Whisk constantly until the sugar dissolves and not grainy anymore.
  2. Place the bowl on the stand mixer and whip on high until it forms a stiff peak. About 10 minutes.
  3. With the mixer on low, beat in the butter. After all the butter is added, increase the speed to medium high and mix until smooth.
  4. This buttercream can be stored on the counter for a few days or in the refrigerator. If store in refrigerator, bring it to room temperature before using.

Unlike regular buttercream, Swiss Buttercream is more refined and not too sweet. This recipe uses granulated sugar instead of powdered sugar. You can easily adjust the sweetness of the buttercream by adding less or more sugar. I like this recipe because the buttercream is thick and holds its shape well.

  • 4 sticks Unsalted Butter, room temperature, cut into Tablespoons

  • 1 pinch of Salt

  4. In another bowl stir together flour, baking soda, and salt.
  5. Add the dry ingredients to the stand mixer. A little at a time.
  6. Fold in chocolate chips or berries (or both)
  7. Grease a loaf pan and pour the batter in. Bake for an hour.
  8. Let it cool down and enjoy!
  9. To store, wrap the banana bread in plastic wrap and keep it refrigerated.
