Beef Pho is one of my favorite comfort food. My husband loves pho so I make it at least once a month. Every time I make it we would have it for lunch and dinner because there’s so much broth for my small family. It is kind of hard to get leg or knuckle bones where I live so I don’t use those when I make mine. Once in awhile I’ll use oxtail bones. They are kind of pricy here.

I remembered my mom making pho with leg bones outside in a large pot. It always took forever for it to be done cooking. It was so delicious that it filled me up every time. Meat balls are always my favorite and one of the best part in pho.

Everyone makes their pho differently so don’t judge. Each pho bowl will taste differently if you add condiments. I like my pho broth to be spicy and sour so my broth will be red instead of brown.

Stir fry is a quick and easy dish to make. It’s one of my family’s classic meals. It is packed with lots of meat and veggies. A very healthy meal. Sometimes I like to switch up the meat (beef, chicken, pork) and vegetables depending on what I want to eat. I’ll be making the Italian sausage stir fry. My 2 year old daughter loves it. She’ll finish both her meat and veggies. It makes me so proud of her for finishing it.

In this recipe, I will be using italian sausage for the meat (requested by my husband). For the vegetables, I’ll be using broccoli and bell peppers with tofu.

Instructions:

minced garlic

First minced the garlic. Set it aside.

cut bell peppers

cut broccoli

cut tofu

Then cut the vegetables and tofu.

paper towel to soak water from tofu

Cover the tofu with a paper towel to soak up the liquid.

saute garlic

In a skillet, add the canola oil and saute the garlic until brown.

cook meat

Add the meat and stir until it’s cook. I usually like to add 1-2 tsp of salt to the meat first.

add broccoli

Add the broccoli and stir 2 minutes. I like to cook my broccolis until they are kind of soft so my daughter can eat it easier.

add bell peppers

Add in the bell peppers.

mix

Stir for 5 minutes.

add sauce

Add in the tofu, the stirfry sauce (Recipe here), salt and black pepper to taste.

rice with stir fry

You’re done. Add 1/2 cup to 1 cup of rice on the side and enjoy!
